Pumpkin Spice Muffins
Look at my cute muffin cases! Tres apt for the recipe :o)
Ingredients
(Makes 3-4dozen)
6C Flour
3C Brown Sugar
6tsp Baking Powder
1tsp Baking Soda
3tsp Cinnamon
1tsp Nutmeg
1tsp Ginger
1tsp ground cloves
2tsp Vanilla extract
250gm Butter
6 eggs
3C cooked, mashed Pumpkin
Method
Pre heat oven to 200C (400F)
Melt butter and beat in eggs and Vanilla. Add mashed pumpkin and set aside.
In another bowl toss dry ingredients together.
Add wet to dry and fold together. Don't over mix, flecks of flour are ok.
Drop spoonfuls into sprayed muffin pans or muffin cases.
Cook 10-15 minutes, check when you can smell them. They should be a nice golden colour and spring back when pressed.

half a pound is quite a bit! but then again, so is 6 cups of flour. i may cut the recipe in half when i try it. i don't have that many friends here! :)
Oooh! These sound super-tasty. I know of some pumpkins that are going to get a good mashing soon!
